Ingredients

  • 4 each Egg yolks
  • 4 each Egg whites
  • 2 cups Whole milk
  • 1/4 teaspoon Salt (Quantity estimated (not specified in original recipe))
  • 3 tablespoons Butter
  • 5 tablespoons All-purpose flour
  • 1 cup Soup stock (Quantity estimated (not specified in original recipe))
  • 3 slices Lemon slices (Quantity estimated (not specified in original recipe))
  • 1 tablespoon Granulated sugar (Quantity estimated (not specified in original recipe))
  • 1/8 teaspoon Grated nutmeg (Quantity estimated (not specified in original recipe))
  • 1 tablespoon Fresh parsley, chopped (Quantity estimated (not specified in original recipe))
  • 1 teaspoon All-purpose flour (For thickening the sauce. Quantity estimated (not specified in original recipe))
  • 1 each Egg yolk (For thickening the sauce. Quantity estimated (not specified in original recipe))

Instructions

  1. 1In a large bowl, beat the egg yolks until very light and fluffy. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the egg yolks.
  2. 2Stir in the milk, salt, and melted butter into the egg mixture. In a small bowl, whisk the flour with a little milk from the 2 cups until smooth, then stir this into the egg mixture.
  3. 3Butter individual oven-safe cups or ramekins. Divide the mixture equally among the prepared cups. Bake in a preheated hot oven at 400°F (200°C) for approximately 20-25 minutes, or until the puffs are golden brown and puffed up.
  4. 4While the puffs are baking, prepare the lemon sauce. In a saucepan, boil the soup stock with lemon slices, sugar, and grated nutmeg. Add chopped parsley. Thicken the sauce with a teaspoon of flour or an egg yolk.
  5. 5Carefully turn the baked puffs out of the cups onto a serving dish. Pour the warm lemon sauce over the puffs and serve immediately.
