Cheese Cake or Pie (Modernized)
This recipe offers a delightful twist on classic cheesecake or pie, combining a creamy cheese filling with a flaky crust. Ingredients
- 1 1/2 cups Cream cheese
- 1/4 cup Butter (Originally sweet butter.)
- 1/2 cup Granulated sugar
- 3 count Egg yolks
- 1 pinch Salt
- 1 tablespoon Lemon zest
- 1/2 cup Currants (Originally cleaned currants.)
- 2 tablespoons Citron, finely chopped
- 2 count Pie crusts (pre-made or homemade) (Originally kuchen dough or pie dough.)
- 3 count Egg whites
Instructions
- 1In a bowl, rub the cream cheese smooth using a spoon. In a separate bowl, cream the butter until smooth. Gradually add the sugar and egg yolks, mixing until combined. Add the salt, lemon zest, currants, and chopped citron. Mix well.
- 2Line two pie plates with pie crusts. Roll out the dough quite thin. Butter the pie plates heavily and let the dough in them rest for at least 15 minutes.
- 3Just before putting the cheese mixture into the pie crusts, whip the egg whites to a very stiff froth. Gently fold the whipped egg whites into the cheese mixture. Pour the cheese mixture into the prepared pie crusts. Bake in a preheated oven at 350°F (175°C) for 30 minutes, or until the crust is golden brown and the filling is set.
