  • 1/2 cup Granulated sugar
  • 3 count Egg yolks
  • 1 pinch Salt
  • 1 tablespoon Lemon zest

  • 2 tablespoons Citron, finely chopped
  • 2 count Pie crusts (pre-made or homemade) (Originally kuchen dough or pie dough.)
  • 3 count Egg whites

Instructions

  1. 1In a bowl, rub the cream cheese smooth using a spoon. In a separate bowl, cream the butter until smooth. Gradually add the sugar and egg yolks, mixing until combined. Add the salt, lemon zest, currants, and chopped citron. Mix well.
  2. 2Line two pie plates with pie crusts. Roll out the dough quite thin. Butter the pie plates heavily and let the dough in them rest for at least 15 minutes.
  3. 3Just before putting the cheese mixture into the pie crusts, whip the egg whites to a very stiff froth. Gently fold the whipped egg whites into the cheese mixture. Pour the cheese mixture into the prepared pie crusts. Bake in a preheated oven at 350°F (175°C) for 30 minutes, or until the crust is golden brown and the filling is set.
