Instructions

  1. 1Mix the barley powder with 1 tablespoon of cold water into a smooth paste, ensuring no lumps remain.
  2. 2Bring 2 quarts of water to a boil. Gradually add the barley paste to the boiling water, stirring constantly to prevent lumps.
  3. 3Reduce heat and simmer the barley water gently for 10 minutes, stirring occasionally to prevent sticking.
  4. 4While barley water simmers, juice the lemon and cut the rind into very thin strips, avoiding the white pith as much as possible.
  5. 5Place the lemon juice and rind in a heat-proof pitcher or bowl. Pour the hot barley water over the lemon while still hot.
  6. 6Add honey, sugar, or simple syrup to taste (start with 2-3 tablespoons). Stir well to dissolve completely in the hot liquid.
  7. 7Let the mixture stand for 1 hour at room temperature to allow the flavors to infuse.
  8. 8Strain the beverage through a fine-mesh strainer or cheesecloth to remove the lemon rind and any barley sediment. Refrigerate until cold, or serve over ice.
