Summer Beverage
A refreshing lemon and barley water drink, sweetened to taste with honey or sugar. This traditional summer cooler combines the soothing properties of barley water with bright citrus notes.
Ingredients
- 1 teaspoon Pearl barley or barley powder (Robinson's patent barley or similar barley powder)
- 2 quarts Water (Spring water or filtered water preferred)
- 1 whole Lemon, juice and rind (Rind cut very thinly)
- 0 to taste Honey, sugar, or simple syrup (Start with 2-3 tablespoons and adjust)

Instructions
- 1Mix the barley powder with 1 tablespoon of cold water into a smooth paste, ensuring no lumps remain.
- 2Bring 2 quarts of water to a boil. Gradually add the barley paste to the boiling water, stirring constantly to prevent lumps.
- 3Reduce heat and simmer the barley water gently for 10 minutes, stirring occasionally to prevent sticking.
- 4While barley water simmers, juice the lemon and cut the rind into very thin strips, avoiding the white pith as much as possible.
- 5Place the lemon juice and rind in a heat-proof pitcher or bowl. Pour the hot barley water over the lemon while still hot.
- 6Add honey, sugar, or simple syrup to taste (start with 2-3 tablespoons). Stir well to dissolve completely in the hot liquid.
- 7Let the mixture stand for 1 hour at room temperature to allow the flavors to infuse.
- 8Strain the beverage through a fine-mesh strainer or cheesecloth to remove the lemon rind and any barley sediment. Refrigerate until cold, or serve over ice.
