Ingredients
- 3 medium Green mangoes, peeled and pitted (Unripe mangoes work best for this recipe)

Instructions
- 1Peel the green mangoes and remove the stones. Cut the flesh into chunks.
- 2In a separate saucepan, bring the milk to a boil, then remove from heat and let it cool completely.
- 3Place the mango chunks in a pot with water and boil until they are completely soft and pulpy, about 15-20 minutes.
- 4Pass the boiled mango pulp through a fine-mesh sieve to create a smooth puree, discarding any fibrous bits.
- 5Add sugar to the mango puree and stir well until completely dissolved. Taste and adjust sweetness as needed.
- 6Very gradually add the cold boiled milk to the sweetened mango puree, stirring constantly to prevent lumps. Continue stirring until the mixture reaches the consistency of a thick custard.
- 7Pour the custard into individual glass cups or serving dishes. Grate a little cinnamon or nutmeg over the top of each serving.
- 8Refrigerate the custards for at least 2 hours before serving to allow them to set and chill completely.
