Green Mango Burta

A traditional Indian condiment made from raw green mangoes, ground into a pulp and mixed with spices, mint, and sugar. This tangy-sweet burta is perfect as a side dish or accompaniment.

Ingredients

  • 2 whole Green mangoes, large (Ordinary large-size, unripe)
  • 0.25 teaspoon Ground chilies (Adjust to taste)
  • 0.5 teaspoon Fresh mint leaves, ground (Freshly ground)
  • 0.5 teaspoon Ground ginger
  • 0.5 teaspoon Salt (More may be added to taste)
  • 1 teaspoon Sugar (More may be added if mangoes are very acidic)

Instructions

  1. 1Peel the two green mangoes and divide them in half. Place the mango halves into a bowl of clean water.
  2. 2Remove the stones from the mango halves. Using a mortar and pestle (or food processor), grind the mango flesh to a perfect smooth pulp. Ensure your grinding tool is perfectly clean and free from any flavors of garlic or turmeric that might transfer to the burta.
  3. 3Add the sugar to the mango pulp and mix well until fully incorporated. Taste the mixture - if the mango is very acidic, add a little more sugar to balance the tartness.
  4. 4Add the salt, ground chilies, ground fresh mint leaves, and ground ginger to the sweetened mango pulp. Mix thoroughly until all ingredients are well combined. Taste and adjust salt or sugar as needed.
  5. 5Transfer the burta to a serving bowl. Serve immediately as a condiment or side dish, or refrigerate until ready to use.
