Fried Plantains
Sweet and crispy fried plantains coated with egg and flour, finished with crystallized sugar. A simple dessert or snack made from very ripe plantains.
Ingredients
- 3 whole Very ripe plantains (Should be very ripe with black spots for sweetness)
- 1 whole Egg yolk (For brushing)
- 3 tablespoons All-purpose flour (For dredging)
- 0.5 cup Ghee or clarified butter (For frying; can substitute with vegetable oil)
- 2 tablespoons Crystallized sugar, crushed (Can use coarse sugar or crushed sugar cubes)
Instructions
- 1Peel the very ripe plantains and slice them lengthwise into two halves.
- 2Beat the egg yolk in a small bowl. Lightly brush each plantain half with the beaten egg yolk on all sides.
- 3Place the flour on a plate. Lightly dredge each egg-brushed plantain half in the flour, coating all sides evenly. Shake off any excess flour.
- 4Heat the ghee in a large frying pan over medium-high heat until it is hot and shimmering but not smoking.
- 5Carefully place the floured plantain halves in the hot ghee. Fry for 3-4 minutes on each side until golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan.
- 6Remove the fried plantains from the pan and drain briefly on paper towels. Transfer to a serving plate while still hot and sprinkle generously with the crushed crystallized sugar. Serve immediately.
