Fried Plantains

Sweet and crispy fried plantains coated with egg and flour, finished with crystallized sugar. A simple dessert or snack made from very ripe plantains.

Ingredients

  • 3 whole Very ripe plantains (Should be very ripe with black spots for sweetness)
  • 1 whole Egg yolk (For brushing)
  • 3 tablespoons All-purpose flour (For dredging)
  • 0.5 cup Ghee or clarified butter (For frying; can substitute with vegetable oil)
  • 2 tablespoons Crystallized sugar, crushed (Can use coarse sugar or crushed sugar cubes)

Instructions

  1. 1Peel the very ripe plantains and slice them lengthwise into two halves.
  2. 2Beat the egg yolk in a small bowl. Lightly brush each plantain half with the beaten egg yolk on all sides.
  3. 3Place the flour on a plate. Lightly dredge each egg-brushed plantain half in the flour, coating all sides evenly. Shake off any excess flour.
  4. 4Heat the ghee in a large frying pan over medium-high heat until it is hot and shimmering but not smoking.
  5. 5Carefully place the floured plantain halves in the hot ghee. Fry for 3-4 minutes on each side until golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan.
  6. 6Remove the fried plantains from the pan and drain briefly on paper towels. Transfer to a serving plate while still hot and sprinkle generously with the crushed crystallized sugar. Serve immediately.
