Ingredients
- 4 cups Green peas, fresh or frozen (Original recipe called for 1 quart)
- 1 tablespoon Butter, for soaking (Walnut-sized piece)
- 2 cups Warm water (Enough to cover peas)
- 3 sprigs Parsley, fresh, tied in a bunch (Tied together for easy removal)
- 1 whole Young onion or scallion, whole (Small spring onion preferred)
- 2 teaspoons Sugar, granulated (Nearly a dessertspoonful)
- 2 tablespoons Butter (About 1 ounce)
- 1 teaspoon All-purpose flour (For thickening)
- 1 tablespoon Hot water (As needed if mixture becomes too thick)

- 1Place the green peas in a bowl with warm water to cover and add the tablespoon of butter. Let stand for 8 to 10 minutes.
- 2Strain off the water from the peas and transfer them to a saucepan. Cover the pan and cook over medium heat, stirring frequently, until the peas begin to soften slightly, about 5 minutes.
- 3In a small bowl, mix together the 2 tablespoons of butter with the teaspoon of flour until well combined to form a paste (beurre manié).
- 4Add the bunch of parsley, whole young onion, sugar, and the butter-flour mixture to the peas. Stir to combine and continue cooking, stirring occasionally, until the peas are tender, about 8 to 10 minutes. If the mixture becomes too thick, add a tablespoon of hot water.
- 5Before serving, remove and discard the onion and bunch of parsley. Transfer the peas to a serving dish and serve hot.
