Boiled Green Peas

- 1 teaspoon Salt
- 1 teaspoon Sugar (Enhances natural sweetness)

Instructions
- 1Shell the peas if not already done. Wash them thoroughly and drain in a colander.
- 2Bring a large pot of water to a rolling boil. Use plenty of water to allow the peas to move freely.
- 3Add the salt and sugar to the boiling water. Add the drained peas and the small bunch of mint if using. Boil uncovered until tender: 15-20 minutes for young peas, or up to 60 minutes for older peas. Test for doneness by tasting a pea.
- 4Immediately drain the peas in a colander. Do not let them sit in the water or they will lose their bright green color. Transfer immediately to a serving dish with the butter and toss gently. If you used mint, remove it from the colander, mince it finely, and arrange in small heaps at the ends or sides of the dish as garnish.
