Apricot Effervescing Drink
A refreshing homemade sparkling apricot drink made with apricot syrup and baking soda. The syrup is prepared in advance and mixed with carbonated water when ready to serve.
Ingredients
- 2 cups Apricots, fresh, bruised (Enough to yield 2 cups juice)
- 1 cup Sugar, granulated (For syrup)
- 1 ounce Tartaric acid (Available at brewing supply stores or online)
- 6 ounces Water, cold (Per serving)
- 0.25 teaspoon Baking soda (sodium bicarbonate) (Per serving, approximately 1 scruple)
Instructions
- 1Bruise fresh apricots by crushing them gently to release their juice. Strain the juice through a fine mesh strainer or cheesecloth to extract 2 cups of juice.
- 2Filter the apricot juice through a coffee filter or multiple layers of cheesecloth until completely clear. This may take several passes.
- 3In a saucepan, combine the filtered apricot juice with 1 cup of sugar. Heat over medium heat, stirring constantly, until the sugar completely dissolves and the mixture becomes syrupy.
- 4Remove the syrup from heat and stir in 1 ounce of tartaric acid until fully dissolved. Allow to cool to room temperature.
- 5Pour the cooled syrup into clean, sterilized bottles. Cork or cap tightly. Store in the refrigerator for up to 2 weeks.
- 6When ready to serve, fill a glass three-quarters full with cold water (about 6 ounces). Add 2 tablespoons of the apricot syrup.
- 7Add 1/4 teaspoon of baking soda to the glass. Stir well immediately. The drink will begin to fizz and effervesce. Drink immediately while still bubbling.
