This refreshing historical cocktail elevates the classic gin squash with a vibrant blend of citrus and tropical flavors, featuring the slightly sweeter profile of Old Tom Gin. Fresh lemon, orange, and pineapple juices mingle with rich rock candy syrup and effervescent seltzer to create a thirst-quenching drink with a delightful balance of sweet and tart notes. Served over plenty of ice in a large stein, it is a sophisticated yet comforting cooler perfect for warm weather sipping.

Ingredients

  • 2 cups Ice cubes (Originally 'Lump Ice'. Quantity estimated for a large stein.)
  • 1 ounce Lemon juice (Originally '1 pony'. Converted to modern measurement (1 pony ≈ 1 fluid ounce).)
  • 1 1/2 ounces Orange juice (Originally '1 jigger'. Converted to modern measurement (1 jigger ≈ 1.5 fluid ounces).)
  • 1 ounce Pineapple juice (Originally '1 pony'. Converted to modern measurement (1 pony ≈ 1 fluid ounce).)
  • 1 ounce Rock candy syrup (or rich simple syrup) (Originally '1 pony Rock Candy Syrup'. Can substitute with rich simple syrup (2 parts sugar to 1 part water).)
  • 1 1/2 ounces Old Tom Gin (Originally '1 jigger Burnette's Old Tom Gin'. Old Tom Gin is slightly sweeter than London Dry.)
  • 4 ounces Seltzer water (Quantity estimated to fill the glass.)

Instructions

  1. 1Fill a large glass stein (or tall highball glass) generously with ice cubes.
  2. 2Pour the lemon juice, orange juice, pineapple juice, rock candy syrup, and Old Tom Gin directly over the ice.
  3. 3Top off the glass with seltzer water. Stir well with a bar spoon to combine the ingredients and chill the drink. Serve immediately.
