Simple Celery Sauce

A basic celery sauce, perfect as a light accompaniment to fish or vegetables. This recipe is modernized for ease of preparation and enhanced flavor.

Ingredients

  • 3 cups Celery stalks (Thinly sliced)
  • 2 tablespoons Butter
  • 0.5 Onion (Finely chopped)
  • 1 cup Vegetable broth
  • 0.5 cup Heavy cream
  • 0.25 teaspoon Salt (Or to taste)
  • 0.125 teaspoon Black pepper (Freshly ground, or to taste)

Instructions

  1. 1Wash and thinly slice the celery stalks. Finely chop the onion.
  2. 2Melt the butter in a saucepan over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes. Add the sliced celery and cook for another 5 minutes, stirring occasionally, until slightly softened.
  3. 3Pour in the vegetable broth, bring to a simmer, and cook for 10 minutes, or until the celery is tender.
  4. 4Stir in the heavy cream, salt, and pepper. Heat through gently, but do not boil. Taste and adjust seasoning as needed. Serve warm.
