Modern Mince Pie Filling

A modernized version of a traditional mince pie filling, using beef, suet, apples, and spices.

Ingredients

  • 1.5 cups Cooked Beef, finely chopped (Use leftover roast beef or braised beef.)
  • 0.75 cup Beef Suet, finely chopped (Vegetable shortening can be substituted, but the flavor will be different.)
  • 2.25 cups Apples, peeled, cored, and finely chopped (Use a mix of tart and sweet apples.)
  • 1 cup Apple Cider
  • 0.125 cup Apple Cider Vinegar
  • 0.33 cup Molasses
  • 1.66 cups Granulated Sugar
  • 0.2 lb Candied Citron, finely chopped
  • 0.75 cup Whole Raisins
  • 0.5 cup Raisins, finely chopped
  • 0.25 teaspoon Salt
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Orange Juice
  • 1 teaspoon Ground Mace
  • 2 teaspoons Ground Cinnamon
  • 2 teaspoons Ground Clove

Instructions

  1. 1In a large pot or Dutch oven, combine the cooked beef, suet, apples, cider, vinegar, molasses, sugar, citron, whole raisins, chopped raisins, salt, lemon juice, orange juice, mace, cinnamon, and clove.
  2. 2Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking. Once simmering, reduce the heat to low, cover, and cook for 1.5 hours, stirring occasionally. The mixture should thicken and the apples should soften.
