Modern Broiled Chicken

A modernized version of a classic broiled chicken recipe, with options for oven-baking to ensure even cooking and prevent burning.

Ingredients

  • 1 Whole chicken, about 3-4 pounds (Cut into pieces for faster cooking, or spatchcocked.)
  • 1 teaspoon Salt (Or to taste)
  • 0.5 teaspoon Black pepper (Freshly ground, or to taste)
  • 2 tablespoons Butter (Softened)
  • 1 tablespoon Cooking oil (For greasing the broiler pan)

Instructions

  1. 1Preheat broiler to high. Pat the chicken dry with paper towels. If using a whole chicken, consider cutting it into pieces or spatchcocking it for more even cooking. Lightly grease a broiler pan with cooking oil.
  2. 2Sprinkle the chicken pieces with salt and pepper, ensuring even coverage.
  3. 3Place the chicken in the prepared broiler pan, skin-side up. Broil for 10 minutes, then flip and broil for another 10-15 minutes, or until the internal temperature reaches 165°F (74°C). Watch carefully to prevent burning, adjusting the broiler rack as needed.
  4. 4Alternatively, preheat oven to 375°F (190°C). Sprinkle the chicken with salt and pepper, dot with butter, and bake for 15 minutes. Then, transfer to the broiler and broil for 5-10 minutes to finish cooking and crisp the skin.
  5. 5Remove the chicken from the broiler (or oven). Place on a hot platter. Spread with softened butter, and sprinkle with salt and pepper. Serve immediately.
