Lemon Fig Spread
A simple lemon fig spread, perfect for toast or pastries. The original recipe suggests using a double boiler, but a saucepan works just as well with careful attention.
Ingredients
- 0.33 cup Boiling water
- 1 tablespoon Lemon juice
- 1 cup Dried figs, stemmed (Chopped)
- 0.5 cup Sugar (Optional, adjust to taste)
Instructions
- 1Chop the dried figs into small pieces. A food processor can be used for this, or chop finely by hand.
- 2In a saucepan, combine the boiling water, lemon juice, chopped figs, and sugar (if using).
- 3Bring the mixture to a simmer over medium heat. Reduce the heat to low and cook, stirring occasionally, until the mixture has thickened to a spreadable consistency. This will take about 15-20 minutes. Be careful not to burn the mixture.
- 4Remove from heat and let cool slightly. The spread will thicken further as it cools. Transfer to a clean jar and store in the refrigerator.
