Instructions
- 1Preheat oven to 350°F (175°C). Cut the squash in half lengthwise. Remove the seeds and stringy portion from the center of each half using a spoon.
- 2Place the squash halves, cut-side up, in a baking pan. Add about 1/2 inch of water to the bottom of the pan. Cover the pan with a lid or aluminum foil. Bake for 2 hours, or until the squash is very soft and easily pierced with a fork.
- 3Remove the squash from the oven and let it cool slightly. Scoop the flesh out of the shell and place it in a bowl. Mash the squash with a fork or potato masher until smooth. Stir in the butter, salt, and pepper. Serve hot.
