- 1 recipe Pasta Dough (See recipe below)
- 1 cup Cooked Meat (chicken, turkey, or veal) (Leftover meat is ideal)
- 1 tablespoon Grated Parmesan Cheese
- 1 Egg
- 1 dash Ground Nutmeg
- 1 dash Grated Lemon Peel
- 1 tablespoon Butter (Cold)
- 1 teaspoon Salt (For boiling water)
- 1 cup Tomato Sauce (For serving, optional)
- 2 tablespoons Grated Parmesan Cheese (For serving, optional)

Instructions
- 1Ingredients: * 2 cups all-purpose flour * 3 large eggs * 1/2 teaspoon salt * 2 tablespoons olive oil (optional) Instructions: 1. On a clean work surface, mound the flour and make a well in the center. 2. Crack the eggs into the well, add the salt, and olive oil (if using). 3. Using a fork, gently whisk the eggs and begin to incorporate the flour from the inner rim of the well. 4. Continue to incorporate the flour until a shaggy dough forms. 5. Use your hands to bring the dough together into a ball. If the dough is too dry, add a teaspoon of water at a time until it comes together. If it's too sticky, add a little more flour. 6. Knead the dough for 8-10 minutes until it is smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
- 2Chop the cooked meat very fine. In a bowl, mix the chopped meat with grated Parmesan cheese, egg, nutmeg, grated lemon peel, and cold butter. Mix well to combine.
- 3Roll out the pasta dough thinly. Place teaspoonfuls of the meat mixture about two inches apart in rows on the pasta sheet. Fold the pasta over the filling, and cut into squares. Press down the edges of each square to seal the filling inside.
- 4Bring a large pot of salted water to a boil. Add the ravioli a few at a time and cook for 10 minutes, or until they float to the surface and are tender.
- 5Serve the ravioli with tomato sauce or butter and grated Parmesan cheese.
