Salad of Artichoke Bottoms
A refreshing salad featuring marinated artichoke bottoms, served on lettuce with mayonnaise and egg yolk.
Ingredients
- 8 pieces Artichoke bottoms, canned or fresh
- 1/4 cup French dressing
- 8 leaves Lettuce heart leaves
- 2 tablespoons Mayonnaise
- 1 yolk Hard-cooked egg yolk
Instructions
- 1Place the artichoke bottoms in a bowl and pour the French dressing over them. Marinate for 30 minutes, turning occasionally.
- 2Drain the artichoke bottoms. Cut them into small pieces, as if you were cutting a pie, keeping the pieces together.
- 3Carefully place each cut artichoke bottom on one or two lettuce heart leaves. Place a rounding teaspoonful of mayonnaise in the center of each bottom. Sift the hard-cooked egg yolk over the mayonnaise.
