Oyster Crabs
A classic dish featuring oyster crabs in a rich sauce.
Ingredients
- 1 pint Oyster crabs
- 1 tablespoon Butter
- 1/2 each Onion (Sliced)
- 1 tablespoon All-purpose flour
- 1 cup White stock (chicken or vegetable)
- 1/2 teaspoon Salt (Quantity estimated (not specified in original recipe))
- 1/4 teaspoon Black pepper (Quantity estimated (not specified in original recipe))
- 1 teaspoon Lemon juice
- 1 tablespoon Fresh parsley (Chopped)
- 1 each Egg yolk
Instructions
- 1Slice the onion and chop the parsley. Beat the egg yolk in a small bowl and set aside.
- 2Melt the butter in a blazer (or saucepan) over medium heat. Add the sliced onion and cook until it turns a light-brown color, about 5-7 minutes.
- 3Add the flour to the onions and mix until smooth. Gradually whisk in the white stock and stir until the sauce thickens. Add the oyster crabs, lemon juice, parsley, salt, and pepper. Simmer for 5 minutes.
- 4Add two or three spoonfuls of the hot sauce to the beaten egg yolk, mix well, and then add the egg mixture to the ingredients in the blazer. Stir constantly until heated through and serve immediately.
