Mushroom-and-Lobster Sandwiches

Instructions
- 1Melt butter in a skillet over medium heat. Add sliced mushrooms and cook for 5 minutes, stirring occasionally. If desired, add sliced onion and cook until softened, about 3 minutes.
- 2Pour in the stock and bring to a simmer. Cook until the mushrooms are very tender, about 10 minutes.
