Fig Sandwiches

A simple recipe for fig sandwiches using figs, almonds, and lemon juice, served on ladyfingers or cakelets.

Ingredients

  • 1/4 pound Figs
  • 1/4 cup Water
  • 1/3 cup Almonds
  • 1/2 of a lemon Lemon juice

Instructions

  1. 1Chop the figs very fine. Add the water and cook to a smooth paste. This can be done in a small saucepan over low heat, stirring constantly, or in a microwave.
  2. 2Add the blanched, chopped almonds and the lemon juice to the fig paste. Stir to combine.
  3. 3When the fig mixture is cold, spread it upon ladyfingers or cakelets. Top with another ladyfinger or cakelet to create a sandwich. Serve on a plate.
