Curried Oysters
A classic curried oyster recipe.
Ingredients
- 1 pint Oysters
- 1/2 cup Heavy cream
- 2 tablespoons Butter
- 1 tablespoon All-purpose flour
- 1/2 cup Oyster liquor
- 1 teaspoon Curry powder
- 1/2 teaspoon Onion, finely chopped
- 1 teaspoon Salt
- 1/4 teaspoon Black pepper
- 4 servings Buttered toast or crackers (Quantity estimated (not specified in original recipe))
Instructions
- 1Parboil and drain the oysters. Set aside.
- 2In a saucepan or skillet, melt the butter over medium heat. Add the chopped onion and cook for a few moments until softened.
- 3Mix the flour and curry powder and stir into the butter and onion mixture. Cook for a moment until frothy. Add the oyster liquor. As soon as the sauce boils up once, add the salt, pepper, and cream.
- 4Add the oysters to the sauce and heat through. Serve immediately on buttered toast or crackers.
