Curried Oysters

A classic curried oyster recipe.

Ingredients

  • 1 pint Oysters
  • 1/2 cup Heavy cream
  • 2 tablespoons Butter
  • 1 tablespoon All-purpose flour
  • 1/2 cup Oyster liquor
  • 1 teaspoon Curry powder
  • 1/2 teaspoon Onion, finely chopped
  • 1 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 4 servings Buttered toast or crackers (Quantity estimated (not specified in original recipe))

Instructions

  1. 1Parboil and drain the oysters. Set aside.
  2. 2In a saucepan or skillet, melt the butter over medium heat. Add the chopped onion and cook for a few moments until softened.
  3. 3Mix the flour and curry powder and stir into the butter and onion mixture. Cook for a moment until frothy. Add the oyster liquor. As soon as the sauce boils up once, add the salt, pepper, and cream.
  4. 4Add the oysters to the sauce and heat through. Serve immediately on buttered toast or crackers.
