A classic wine jelly recipe.

Ingredients

  • 1 package (2 ounces) Gelatin
  • 1 cup Cold Water
  • 2 cups White Wine or Sherry
  • 1 lemon, all the juice Lemon Juice
  • 1/2 grated peel Lemon Peel
  • 1 teaspoonful Almond Extract
  • 2 cups White Sugar
  • 2 cups Boiling Water

Instructions

  1. 1Soak the gelatine in a large cup of cold water for 2 hours.
  2. 2In a bowl, combine the soaked gelatine, lemon juice, lemon peel, almond extract, and sugar. Cover and let stand for 30 minutes.
  3. 3Pour the boiling water over the mixture, stir until the sugar is dissolved, and strain.
  4. 4Add the wine and strain the mixture again through a fine mesh strainer or a flannel bag, without squeezing. Pour into a mold that has been wet with cold water and refrigerate until solid.
