Suet Dumplings (Danish)
A classic Danish dumpling recipe.
Ingredients
- 1 cupful Butter or vegetable shortening (Originally suet. Substituted with butter or vegetable shortening.)
- 1 cupful Grated English muffins or bread
- 1 cupful Flour
- 1/2 teaspoonful Baking powder
- 1/2 cupful Sugar
- 2 Eggs
- 1 pint Milk
- 1 large pinch Salt

Instructions
- 1Sift together the baking powder and flour in a bowl. Add the beaten eggs, grated muffins or bread, sugar, butter or shortening, and milk. Mix until a smooth batter forms.
- 2Bring the milk to a boil in a pot. Drop spoonfuls of the batter into the boiling milk, three or four at a time. Cook until the dumplings are done. Dish the dumplings and pour the milk they were boiled in over them.
