- slices Beef kidney
- to taste Black pepper
- to taste Salt
- as needed Flour
- as needed Warm water

Instructions
- 1Cut the beef kidney into slices.
- 2Season the kidney slices highly with pepper and salt. Fry the slices until lightly browned.
- 3Pour a little warm water into the pan. Dredge the kidney slices in flour and put them back into the pan. Let them stew very gently until tender.
- 4For sheep's kidneys, split them open and broil them over a clear fire. Serve with a piece of butter placed on each half.
