- as needed Salt

- 12 Eggs

- 1Chop the beef kidney very fine, similar to minced meat. Place in a stewpan, season with salt and pepper to taste. Stew for 30 minutes or more. When done, pour off the juice.
- 2Beat together the whites and yolks of 12 eggs. Stir the stewed kidney into the eggs. Add a lump of butter, about the size of an egg. Place the mixture back on the heat. Cook until the omelette is set and serve hot.
