Instructions
- 1For soft and juicy fruits (peaches, plums, apricots, bananas, etc.): Remove the kernels and press the fruit through a sieve. For hard fruits (apples, pears, etc.): Cook them first and then press through a sieve.
- 2In a bowl, combine the sieved fruit, powdered sugar, and the whites of three eggs. Beat well with an egg-beater for 5 to 6 minutes.
- 3In a separate bowl, beat the whites of 6 or 7 eggs into a stiff froth.
- 4Gently mix the whipped egg whites into the fruit mixture. Put this on a dish and bake in a preheated oven at 350°F (175°C) for 5 to 6 minutes before serving. Sprinkle powdered sugar on top.
