Shrewsbury Cake

A classic Shrewsbury Cake recipe from 1888, featuring a rich and flavorful cake baked in a cake mould.

Ingredients

  • 1 cup Butter
  • 3 cups Sugar
  • 1.5 pints Flour
  • 3 Eggs
  • 1 teaspoon Royal Baking Powder
  • 1 cup Milk
  • 1 teaspoon Royal Extract Rose

Instructions

  1. 1In a large bowl, rub together 1 cup of butter and 3 cups of sugar until smooth and creamy.
  2. 2Add 3 eggs, one at a time, beating for 5 minutes between each addition.
  3. 3Sift together 1 1/2 pints of flour and 1 teaspoon of Royal Baking Powder. Add the sifted flour mixture and 1 teaspoon of Royal Extract Rose to the batter. Mix until just combined into a medium batter.
  4. 4Mix in 1 cup of milk until a medium batter is formed.
  5. 5Preheat oven to 425°F (220°C). Grease a cake mould well and carefully. Pour the batter into the prepared mould and bake in the preheated quick oven for 40 minutes, or until a toothpick inserted into the center comes out clean.
