Lunch Rolls
Simple rolls made with flour, salt, baking powder, lard, and milk.
Ingredients
- 1 quart All-purpose flour
- 1 teaspoonful Salt
- 2 teaspoonfuls Baking powder
- 1 tablespoonful Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- 1 pint Milk
- as needed Milk (For washing the rolls.)
Instructions
- 1Sift together flour, salt, and baking powder. Cut in the cold butter (or shortening) until the mixture resembles coarse crumbs. Add milk and mix until a smooth dough forms that is easily handled.
- 2Lightly flour a clean work surface. Turn out the dough and give it 1 or 2 quick kneadings to give it smoothness. Roll out the dough to a little over 1/2 inch thick. Cut out rolls using a round cutter about 2 1/2 inches in diameter. Place the rolls on a greased baking sheet, just touching (in rows evenly).
- 3Preheat oven to 400°F (200°C). Wash the tops of the rolls with milk. Bake for 25 minutes. Wash them over again with milk when taken from the oven.
