Lunch Rolls

Simple rolls made with flour, salt, baking powder, lard, and milk.

Ingredients

  • 1 quart All-purpose flour
  • 1 teaspoonful Salt
  • 2 teaspoonfuls Baking powder
  • 1 tablespoonful Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
  • 1 pint Milk
  • as needed Milk (For washing the rolls.)

Instructions

  1. 1Sift together flour, salt, and baking powder. Cut in the cold butter (or shortening) until the mixture resembles coarse crumbs. Add milk and mix until a smooth dough forms that is easily handled.
  2. 2Lightly flour a clean work surface. Turn out the dough and give it 1 or 2 quick kneadings to give it smoothness. Roll out the dough to a little over 1/2 inch thick. Cut out rolls using a round cutter about 2 1/2 inches in diameter. Place the rolls on a greased baking sheet, just touching (in rows evenly).
  3. 3Preheat oven to 400°F (200°C). Wash the tops of the rolls with milk. Bake for 25 minutes. Wash them over again with milk when taken from the oven.
