Ingredients
- as needed Lobster meat
- 1 Raw egg
- 1 Hard-boiled egg
- 1/2 pint Salad oil
- 2 lemons Lemon juice
- 2 saltspoonfuls Salt
- 1/2 saltspoonful Cayenne pepper
- 1 saltspoonful Dry mustard
- as needed Lettuce
- as needed Celery
- as needed Eggs (or chopped coral)

Instructions
- 1Tear lobster meat into shreds with two forks. Remove eggs (if hen lobster) from fins. Scrape out all green fat from shell and set aside. (Prep time: 5 minutes)
- 2Work the yolks of 2 raw eggs to a smooth paste. Add 2 saltspoonfuls salt, 1/2 saltspoonful cayenne pepper, 1 saltspoonful dry mustard, and 1 teaspoonful salad oil. Mix these ingredients thoroughly and add strained juice of 1/2 a lemon. Take remainder of 1/2 pint finest salad oil and add gradually teaspoonful at a time. Every fifth teaspoonful add few drops of lemon juice, until you have used 2 lemons and 1/2 pint of oil. (Prep time: 5 minutes, Perform time: 10 minutes)
- 3Mix lobster meat with 3 tablespoonfuls mayonnaise sauce. Cover the bottom of a dish with lettuce (the large leaves tear in two). Put a layer of lobster upon it. Next, add a layer of celery cut into narrow strips, and another layer of lobster. Arrange neatly on the dish. Sprinkle eggs or chopped coral on lettuce round the edges. Pour sauce over meat, garnish with lobster legs, and serve. (Prep time: 5 minutes)
