Instructions
- 1Make puff pastry and spread it on very deep pate-pans. Bake the pastry shells in a preheated oven at 400°F (200°C) until golden brown and cooked through. Let cool.
- 2Boil the lobsters until cooked. Extract all the meat and mince it very small. Mix the minced lobster meat with the coral (lobster roe) that has been smoothly mashed, and the grated egg yolks from hard-boiled eggs. Season with salt, cayenne pepper, and powdered mace or nutmeg. Add a little grated yellow lemon rind. Moisten the mixture well with heavy cream, fresh butter, or salad oil.
- 3Put the lobster mixture into a stewpan. Add a very little water. Let it stew until it just comes to a boil.
- 4Remove the pates from the oven. Place them on a large dish and fill them up to the top with the lobster mixture.
