Huckleberry Pudding
A classic pudding featuring huckleberries, baked to a soft and flavorful consistency.
Ingredients
- 3 pieces Stale Sugar Muffins or bread
- 3 cups Huckleberries
- 1 cup Sugar
- 1 teaspoon Cinnamon extract (Originally Royal Extract Cinnamon.)
- 1 teaspoon Ground cloves (Originally Royal Extract Cloves.)
- 1 1/2 pints Whole milk
- 3 large Eggs
- 1/8 teaspoon Salt
Instructions
- 1Grate the stale sugar muffins or bread. Place the grated bread in a large bowl.
- 2Pour the milk, boiling, over the grated bread in the bowl. Cover with a plate and let stand for 30 minutes, allowing the bread to soak up the milk.
- 3In a separate bowl, beat the eggs. Add the beaten eggs, sugar, salt, cinnamon extract, ground cloves, and huckleberries to the bread mixture. Mix well to combine all ingredients.
- 4Preheat oven to 350°F (175°C). Pour the mixture into a buttered pudding dish. Bake in the preheated oven for 45 minutes, or until the pudding is set and lightly golden.
- 5Serve the pudding warm with Spice Sauce (not included in this recipe).
