French Pickles

A classic pickle recipe.

Ingredients

  • 1 peck Green tomatoes
  • 6 large Onions
  • 1 teacup Salt
  • 2 quarts Water
  • 1 quart Vinegar
  • 4 quarts Vinegar
  • 2 pounds Brown sugar
  • 1/2 pound White mustard seed
  • 2 tablespoonfuls Cloves
  • 2 tablespoonfuls Cinnamon
  • 2 tablespoonfuls Ginger
  • 2 tablespoonfuls Ground mustard
  • 1 teaspoonful Cayenne pepper

Instructions

  1. 1Slice the green tomatoes and onions. Place them in a bowl and add the salt. Let it sit overnight.
  2. 2Drain the tomatoes and onions thoroughly. Boil them in 2 quarts of water and 1 quart of vinegar for 15-20 minutes. Drain in a colander.
  3. 3In a separate pot, combine 4 quarts of vinegar, 2 pounds of brown sugar, 1/2 pound of white mustard seed, 2 tablespoonfuls of cloves, 2 tablespoonfuls of cinnamon, 2 tablespoonfuls of ginger, 2 tablespoonfuls of ground mustard, and 1 teaspoonful of cayenne pepper. Put all together, cook for 15 minutes.
