French Pickles
A classic pickle recipe.
Ingredients
- 1 peck Green tomatoes
- 6 large Onions
- 1 teacup Salt
- 2 quarts Water
- 1 quart Vinegar
- 4 quarts Vinegar
- 2 pounds Brown sugar
- 1/2 pound White mustard seed
- 2 tablespoonfuls Cloves
- 2 tablespoonfuls Cinnamon
- 2 tablespoonfuls Ginger
- 2 tablespoonfuls Ground mustard
- 1 teaspoonful Cayenne pepper

Instructions
- 1Slice the green tomatoes and onions. Place them in a bowl and add the salt. Let it sit overnight.
- 2Drain the tomatoes and onions thoroughly. Boil them in 2 quarts of water and 1 quart of vinegar for 15-20 minutes. Drain in a colander.
- 3In a separate pot, combine 4 quarts of vinegar, 2 pounds of brown sugar, 1/2 pound of white mustard seed, 2 tablespoonfuls of cloves, 2 tablespoonfuls of cinnamon, 2 tablespoonfuls of ginger, 2 tablespoonfuls of ground mustard, and 1 teaspoonful of cayenne pepper. Put all together, cook for 15 minutes.
