Election Cake
A historical cake recipe featuring butter, sugar, flour, eggs, raisins, currants, citron, lemon peel, almonds, and flavor extracts.
Ingredients
- 1.5 cups Butter
- 2 cups Sugar
- 1.5 pints Flour
- 3 Eggs
- 1.5 teaspoonfuls Royal Baking Powder
- 2 cups Raisins, stoned
- 1 cup Currants, washed and picked
- 0.5 cupful Citron, chopped
- 0.5 cupful Lemon peel, chopped
- 0.5 cupful Almonds, blanched and cut in shreds
- 20 drops Royal Extract of Bitter Almonds
- 20 drops Vanilla
- 1 cupful Milk
Instructions
- 1In a large bowl, rub the 1 1/2 cupfuls of butter and 2 cupfuls of sugar together until you have a white, light cream.
- 2Add 3 eggs to the creamed butter and sugar, and beat for a while longer.
- 3Sift 1 1/2 pints of flour with 1 1/2 teaspoonfuls of Royal Baking Powder. Add the sifted flour mixture, 2 cupfuls of stoned raisins, 1 cupful of washed and picked currants, 1/2 cupful of chopped citron, 1/2 cupful of chopped lemon peel, 1/2 cupful of blanched and shredded almonds, 20 drops each of Royal Extract of Bitter Almonds and Vanilla, and 1 cupful of milk to the batter. Mix until a consistent batter is formed.
- 4Preheat oven to 350°F (175°C). Put the batter in a paper-lined tin and bake in a moderate oven for 1 1/2 hours.
