Duchesse Cake

A classic cake recipe from 1888, featuring a rich batter flavored with cinnamon extract and baked in small, shallow pans.

Ingredients

  • 1.5 cups Butter
  • 1 cup Sugar
  • 6 Eggs
  • 1 teaspoon Royal Baking Powder
  • 1 pint Flour
  • 1 teaspoon Royal Extract Cinnamon

Instructions

  1. 1In a large bowl, rub together 1 1/2 cupfuls of butter and 1 cupful of sugar until light and creamy.
  2. 2Add 6 eggs, 2 at a time, beating for 10 minutes between each addition.
  3. 3Sift together 1 pint of flour and 1 teaspoonful of Royal Baking Powder.
  4. 4Add the sifted flour mixture to the butter and egg mixture, along with 1 teaspoonful of Royal Extract Cinnamon. Mix until a medium thick batter forms.
  5. 5Preheat oven to 350°F (175°C). Line small, shallow, square pans with thin white paper. Pour the batter into the prepared pans and bake in a steady oven for 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. 6Once the cakes are taken from the oven, ice them as desired.
