Dried Apple Cake
A traditional cake featuring dried apples, molasses, and spices.
Ingredients
- 3 cups Dried apples (Soaked overnight)
- as needed Warm water (For soaking)
- 3 cups Molasses
- 2 Eggs
- 1 cup Sugar
- 1 cup Sweet milk or water
- 0.25 cup Butter or lard
- as needed Flour (To make a stiff batter)
- 2 heaping teaspoonfuls Baking powder
- to taste Cinnamon
- to taste Cloves
- to taste Nutmeg
- as desired Raisins (Optional)
Instructions
- 1Soak 3 cups of dried apples in warm water overnight (approximately 12 hours).
- 2Drain the water from the soaked apples through a sieve. Chop the apples slightly.
- 3Simmer the chopped apples for 2 hours in 3 cups of molasses.
- 4Add 2 eggs, 1 cup of sugar, and 1 cup of sweet milk or water to the apple-molasses mixture. Then, add 1/4 cup of butter or lard.
- 5Add flour to make a stiff batter. Mix in 2 heaping teaspoonfuls of baking powder. Add cinnamon, cloves, and nutmeg to taste. Raisins can be added for improved flavor.
- 6Preheat oven to 350°F (175°C). Pour batter into a greased cake pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
