Deviled Crabs
A classic deviled crab recipe.
Ingredients
- 1 cup Crab meat
- 2 tablespoonfuls Bread crumbs
- 2 yelks Hard boiled eggs
- 1 tablespoon Lemon juice
- 1/2 teaspoonful Mustard
- 1/8 teaspoon Cayenne pepper
- 1/4 teaspoon Salt
- 1 cup Butter
- 2 tablespoonfuls Flour
- 1 pint Water
- 1 tablespoon Parsley

Instructions
- 1In a small saucepan, melt 1/3 cup butter over medium heat. Whisk in 2 tablespoonfuls flour until smooth. Gradually whisk in 1 pint boiling water. Season with salt. Add parsley if desired. Simmer until slightly thickened. Remove from heat and set aside.
- 2In a bowl, mix 1 spoonful of bread crumbs with the chopped crab meat, egg yolks, lemon juice, mustard, cayenne pepper, salt, and drawn butter. Stir until well combined.
- 3Fill scallop shells or small paté-pans with the mixture. Sift bread crumbs over the top. Preheat oven to 400°F (200°C). Bake for 20 minutes, or until the top is lightly browned and the filling is heated through.
