Crullers

A classic fried pastry, twisted and served with sugar.

Ingredients

  • 1 quart Flour (All-purpose)
  • 0.5 cup Lard
  • 0.5 cup Butter
  • 1 cup Sugar
  • 1.5 teaspoon Royal Baking Powder
  • 0.75 pint Milk
  • 2 Eggs
  • 1 teaspoon Royal Extract Nutmeg
  • plenty Lard (For frying)
  • as needed Sifted Sugar (For serving)

Instructions

  1. 1Sift together 1 quart flour, 1 cupful sugar, and 1 1/2 teaspoonfuls Royal Baking Powder in a large bowl.
  2. 2Rub in 1/2 cupful lard and 1/2 cupful butter into the flour mixture until it resembles coarse crumbs.
  3. 3Add 2 beaten eggs, 1 teaspoonful Royal Extract Nutmeg, and 3/4 pint milk to the mixture. Mix into a smooth dough that is just soft enough to handle conveniently.
  4. 4Roll out the dough with a rolling pin on a well-floured board. Cut into strips about 1/2 inch square, twist into different shapes.
  5. 5Heat plenty of lard in a deep fryer or large pot to 350°F (175°C). Fry the twisted dough until golden brown. This should take approximately 3-5 minutes per batch.
  6. 6Serve the crullers hot, sprinkled with sifted sugar.
