Instructions
- 1Heat the milk and cracker crumbs together in a saucepan until the mixture is scalding. Remove from heat and set aside to cool.
- 2While the milk and crumbs are cooling, cream the butter and sugar together in a bowl until light and fluffy. Add the lemon juice and grated peel.
- 3Stir the beaten egg yolks into the butter and sugar mixture. Then, stir in the cooled cracker and milk mixture. Finally, gently fold in the beaten egg whites.
- 4Butter a baking dish. Spread the jam evenly over the bottom of the dish. Pour the cracker mixture over the jam. Bake in a preheated oven at 350°F (175°C) for 30 minutes, covered. Then, remove the cover and bake for an additional 15 minutes, or until the top is browned.
- 5Let the pudding cool completely before serving. Sprinkle with sifted sugar on top. If desired, a meringue can be added before removing from the oven.
