Blackberry Griddle Cakes
Blackberry or Raspberry Griddle Cakes based on the Huckleberry Griddle Cakes recipe.
Ingredients
- 1/2 pint Huckleberries (or Blackberries/Raspberries)
- 1 1/2 pints All-purpose flour
- 1 teaspoonful Salt
- 1 tablespoonful Brown sugar
- 2 teaspoonfuls Baking powder
- 2 Eggs
- 1 pint Milk
Instructions
- 1Sift together flour, sugar, salt, and baking powder in a large bowl. In a separate bowl, whisk the eggs. Add the milk and huckleberries (washed and picked over) to the egg mixture. Pour the wet ingredients into the dry ingredients and mix until just combined, forming a batter that will run from a pitcher in a thick, continuous stream.
- 2Heat a griddle over medium heat until hot enough to form a crust soon as batter touches it. Pour batter onto the hot griddle, forming cakes of desired size. To confine the juice of the berries, turn quickly, so as to form a crust on the other side; turn once more on each side to complete baking. Cook until golden brown, about 2-3 minutes per side.
