Bean Soup
A simple bean soup recipe.
Ingredients
- 1 quart White beans
- 3 quarts Water
- 1/4 cup Flour
- 1/4 cup Butter
- 1 teaspoon Salt
- 1/4 teaspoon Black pepper
- 4 slices Bread, cold

Instructions
- 1Soak the white beans in a quart of water overnight.
- 2In the morning, pour off the soaking water. Add fresh water and set over medium heat until the skins easily slip off. Throw the beans into cold water and rub them well to remove the skins.
- 3Boil the beans in 3 quarts of water until perfectly soft.
- 4Mash the beans. In a separate bowl, rub together the flour and butter. Add the flour mixture, salt, and pepper to the mashed beans.
- 5Cut the cold bread into small pieces and toast them. Drop the toasted bread pieces on top of the soup when serving.
