Asparagus

A simple preparation of asparagus, similar to peas, served on toast with cream gravy.

  • 1 pound Asparagus
  • 4 slices Bread
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1 cup Whole milk
  • to taste Salt
  • to taste Black pepper

Instructions

  1. 1Wash the asparagus and trim the tough ends. Steam or boil the asparagus until tender-crisp, about 5-7 minutes. Set aside.
  2. 2In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to form a roux. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the gravy thickens, about 5 minutes. Season with salt and pepper to taste.
  3. 3Toast the bread. Arrange the asparagus on the toast. Spoon the cream gravy over the asparagus and serve immediately.
