Bring the water to a boil over high heat, then reduce the heat to low, cover, and simmer gently until the peas are tender. This may take 1 to 3 hours, depending on the age and quality of the peas. Check occasionally and add more water if needed to keep the peas covered.
- 3Once the peas are tender, add the fresh mint sprigs. Simmer for 1 minute to infuse the flavor. Remove from heat and strain the peas, discarding the mint sprigs.
- 4Return the strained peas to the pot. Add the butter, salt, pepper, and sugar. Stir gently to combine. If desired, add a tiny drop of green food coloring for a brighter green color. Serve hot.
