Ingredients

  • 1.5 pounds Potatoes (Peeled and cubed)
  • 1 medium Onion (Finely chopped)
  • 1 tablespoon Ginger (Grated)
  • 2 cloves Garlic (Minced)
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Chili powder (Adjust to taste)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 2 tablespoons Vegetable oil
  • 1 cup Water
  • 0.5 teaspoon Salt (Or to taste)
  • 1 package Pie crust (Store-bought or homemade)

Instructions

  1. 1Peel and cube the potatoes into approximately 1-inch pieces. Set aside.
  2. 2Heat vegetable oil in a large pan or pot over medium heat. Add chopped onion and sauté until golden brown (about 5-7 minutes). Add grated ginger and minced garlic and sauté for another minute until fragrant.
  3. 3Add turmeric powder, chili powder, ground cumin, and ground coriander to the pan. Stir for about 1 minute until the spices are fragrant. Add the cubed potatoes and stir to coat them with the spice mixture.
  4. 4Add water and salt to the pan. Bring to a simmer, then reduce heat, cover, and let simmer for 20 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
  5. 5Preheat oven to 375°F (190°C). Place one pie crust in a pie dish. Pour the potato filling into the crust. Cover with the second pie crust, crimp the edges to seal, and cut slits in the top to allow steam to escape.
  6. 6Bake in the preheated oven for 30-40 minutes, or until the crust is golden brown. Let cool slightly before serving.
