Mashed Parsnips

A simple and comforting side dish of mashed parsnips, enhanced with butter and cream.

Ingredients

  • 1 kg Parsnips
  • 50 g Butter
  • 0.5 tsp Salt (Or to taste)
  • 0.25 tsp Black pepper (Or to taste)
  • 60 ml Cream (Optional, for extra richness)

Instructions

  1. 1Wash, peel, and chop the parsnips into 1-inch pieces.
  2. 2Place the parsnips in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 60 minutes, or until very tender.
  3. 3Drain the parsnips well. Return them to the pot. Add the butter, salt, and pepper. Mash with a potato masher or pass through a food mill or ricer for a smoother texture. If using a food mill, discard any stringy parts that remain in the mill.
  4. 4Stir in the cream (if using). Heat through gently. Serve immediately.
