Ingredients

  • 4 tablespoons Tapioca
  • 1/4 teaspoon Salt
  • 2 tablespoons Cold water
  • 1 cup Boiling water
  • 2 tablespoons Sugar
  • 8 Dates, finely chopped
  • 1 tablespoon Lemon juice
  • 1 Egg yolk
  • 1 Egg white
  • 1 teaspoon Vanilla extract

Instructions

  1. 1In a saucepan, combine tapioca, salt, and cold water. Let it sit for 10 minutes to allow the tapioca to soften.
  2. 2Add boiling water and sugar to the saucepan. Cook over medium heat, stirring constantly, until the tapioca becomes translucent and the mixture thickens, about 15-20 minutes.
  3. 3Remove from heat and stir in the chopped dates and lemon juice.
  4. 4In a small bowl, whisk the egg yolk. Gradually whisk a small amount of the hot tapioca mixture into the egg yolk to temper it. Then, whisk the tempered egg yolk back into the saucepan.
  5. 5In a separate clean bowl, beat the egg white until stiff peaks form. Gently fold the beaten egg white and vanilla extract into the tapioca mixture.
