Tapioca and Date Pudding

Ingredients
- 4 tablespoons Tapioca
- 1/4 teaspoon Salt
- 2 tablespoons Cold water
- 1 cup Boiling water
- 2 tablespoons Sugar
- 8 Dates, finely chopped
- 1 tablespoon Lemon juice
- 1 Egg yolk
- 1 Egg white
- 1 teaspoon Vanilla extract
Instructions
- 1In a saucepan, combine tapioca, salt, and cold water. Let it sit for 10 minutes to allow the tapioca to soften.
- 2Add boiling water and sugar to the saucepan. Cook over medium heat, stirring constantly, until the tapioca becomes translucent and the mixture thickens, about 15-20 minutes.
- 3Remove from heat and stir in the chopped dates and lemon juice.
- 4In a small bowl, whisk the egg yolk. Gradually whisk a small amount of the hot tapioca mixture into the egg yolk to temper it. Then, whisk the tempered egg yolk back into the saucepan.
- 5In a separate clean bowl, beat the egg white until stiff peaks form. Gently fold the beaten egg white and vanilla extract into the tapioca mixture.
