Swiss Steak (Three portions)
This classic Swiss Steak recipe transforms a humble cut of round steak into a tender, flavorful, and satisfying meal. The steak is pounded with flour, browned to perfection, and then simmered slowly in a rich gravy with onions and spices. Ingredients
- 1 lb Round steak
- 5 tablespoons All-purpose flour
- 1 leaf Bay leaf
- 1/4 teaspoon Salt
- 1/8 teaspoon Black pepper
- 1/2 cup Water
- 1 tablespoon Onion
- 2 cloves Whole cloves
- 1 tablespoon Bacon fat
Instructions
- 1Wipe the steak with a damp cloth. Trim the edges to remove any gristle. Pound the flour into the meat, using a side of a heavy plate for the pounding. This helps to break up the tendons of the meat.
- 2Place the bacon fat in a frying pan and heat over medium-high heat until hot. Add the floured steak and brown thoroughly on each side, about 3-4 minutes per side, until a nice crust forms.
- 3Lower the heat to low. Add the bay leaf, salt, pepper, onion, and water to the pan. Cover with a lid and allow to cook slowly for 1 1/2 hours, or until the steak is tender. Add more water if the gravy boils down too much.
- 4Pour the gravy over the meat when serving.
