Ingredients
- 4 lbs Leg of Lamb (4 lbs)
- 6 large Potatoes
- 2 tablespoons Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- 1/4 teaspoon Paprika
- 1 tablespoon Salt
Instructions
- 1Wash the leg of lamb with a damp cloth. Wipe it dry and sprinkle with 2 teaspoons of salt.
- 2Place the butter (or vegetable shortening) in a frying pan. When hot, add the lamb and brown well on all sides.
- 3Sprinkle the potatoes with salt and paprika.
- 4Place the browned meat in a roasting pan. Arrange the seasoned potatoes around the leg of lamb. Cook in a preheated oven at 325°F (160°C) for 3 hours, or until the lamb is cooked to your desired doneness. Use the drippings for gravy.
