Ingredients
- 1 cup Steamed rice
- 1/4 teaspoon Salt
- 1 each Egg yolk
- 1 teaspoon Chopped parsley
- 1 tablespoon Butter
- 3 tablespoons Flour
- 1/8 teaspoon Paprika
- 2 tablespoons Grape jelly
- 2 cups Vegetable oil (Quantity estimated (not specified in original recipe))
Instructions
- 1In a medium bowl, combine the steamed rice, salt, egg yolk, chopped parsley, butter, and paprika. Mix well until everything is evenly distributed.
- 2Shape the rice mixture into flat disks, about 1 inch thick and 3 inches in diameter. Roll each disk in flour, ensuring it's evenly coated. Use your finger or the back of a spoon to make a small indentation in the center of each disk to hold the jelly.
- 3Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully fry the croquettes in the hot oil until they are golden brown, about 3-4 minutes per side. Remove the croquettes and drain them on a wire rack or paper towels, wrong side up.
- 4Place the fried croquettes on a baking sheet and heat in a preheated oven at 350°F (175°C) for 5 minutes. Remove from the oven and place a small amount of grape jelly in the center of each croquette. Serve immediately.
