Potato Doughnuts
These old-fashioned potato doughnuts are a delightful treat, offering a unique twist on the classic fried dough. The addition of mashed potatoes creates a tender, moist interior with a slightly crisp exterior, making them incredibly satisfying. These doughnuts are rich, sweet, and warmly spiced with nutmeg and cinnamon, perfect for a comforting breakfast or dessert.
Ingredients
- 1 cup Mashed Potatoes, hot
- 1 1/2 cups Granulated Sugar
- 2 tablespoons Butter, melted
- 3 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Whole Milk (Originally "sweet milk". Substituted with whole milk.)
- 2 Eggs
- 3 cups All-Purpose Flour
- 1/8 teaspoon Grated Nutmeg
- 1/2 teaspoon Ground Cinnamon
- 3 cups Vegetable Oil, for frying (Quantity estimated (not specified in original recipe))
Instructions
- 1In a large bowl, beat the eggs. Add the sugar and continue to beat until well combined. Mash the hot potatoes and add the melted butter and milk. Add this mixture to the eggs and sugar. In a separate bowl, sift together the flour, baking powder, salt, nutmeg, and cinnamon.
- 2Add the sifted dry ingredients to the wet ingredients and mix until just combined. Do not overmix. Roll the dough out to about 1/4 inch thickness on a lightly floured surface. Use a doughnut cutter to cut out the doughnuts. Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the doughnuts for about 2-3 minutes per side, or until golden brown. Remove with a slotted spoon and place on a wire rack to cool.
