Peach Cup (Two portions)

Ingredients
- 4 halves Canned peach halves, sweetened
- 1 T Egg (Quantity estimated (not specified in original recipe))
- 3 T Milk
- 2/3 C All-purpose flour
- 1 1/2 t Baking powder
- 1/8 t Salt
- 1 t Melted butter
- 1/4 t Vanilla extract
- 2 T Granulated sugar
Instructions
- 1Mash two peach halves in a bowl. Add the egg, milk, vanilla extract, melted butter, flour, baking powder, and salt. Mix thoroughly until a smooth batter forms.
- 2Preheat oven to 350°F (175°C). Place a tablespoon of the mixture in the bottom of a well-buttered baking cup. Add a peach half on top of the batter, and cover with more batter. Sprinkle one tablespoon of granulated sugar on top of each cup. Bake for 20 minutes in the preheated oven, or until golden brown.
